
Chicken Hot Pot Recipe
When traveling in the mountains, I stayed at a farmer's house. In the morning, the roosters crowed and the owner slaughtered chickens and picked fresh mushrooms from the back mountain. Main Ingredients
- ·500g free range chicken
- ·70g mushroom
- ·70g Seafood Mushroom
- ·70g Deer antler mushroom
- ·100g King Oyster Mushroom
Additional Ingredients
- ·10g ginger
- ·5 red dates
- ·10g wolfberry
Seasonings
- ·30ml Cooking wine
- ·5g Allspice
- ·10ml soy sauce
- ·10g Salt
DIRECTIONS
Step 1
Pre-treatment of ingredients: Wash the shiitake mushrooms and cut them in half, wash the seafood mushrooms and cut them into sections, remove the roots of the antler mushrooms, slice the king oyster mushrooms, and slice the ginger; clean the native chicken and cut it into pieces, put it in a bowl, pour in 10ml of cooking wine, add 5g of five-spice powder and stir evenly to remove the fishy smell.
Step 2
Stir-fry the chicken: Pour the marinated chicken pieces into the pot, place it on the stove, stir-fry over medium heat for 5 minutes until the chicken changes color, then add the ginger slices.
Step 3
Seasoning and coloring: Add 10ml cooking wine and 10ml soy sauce to the pot, stir-fry quickly for 15 seconds to allow the chicken to be evenly colored and absorb the aroma of the seasoning.
Step 4
First stew: Add enough water to the pot to cover the ingredients, cover the pot, bring to a boil over high heat, then simmer over low heat for 30 minutes to allow the chicken to fully cook out its flavor.
Step 5
Add mushrooms to the pot: Pour shiitake mushrooms, king oyster mushrooms, velvet mushrooms and seafood mushrooms into the pot, turn to high heat and cook for 10 minutes until the soup boils, so that the mushrooms begin to absorb the flavor of the chicken soup.
Step 6
Seasoning: Add red dates, wolfberries and two teaspoons of salt, turn to low heat and cook for another 10 minutes to allow the flavors to fully blend and the ingredients to be cooked through.
Step 7
Hot pot assembly: After cooking, pour all the ingredients into the hot pot, match them with various side dishes according to personal preferences, and you can start enjoying the delicious hot pot.
