Ingredients and Substitutions
To make these delicious egg pancakes, you'll need the following ingredients:
Main Ingredients
Eggs: Essential for making the pancakes fluffy and nutritious.
Flour: The base of the pancakes; you can use either all-purpose or cake flour.
Additional Ingredients
Milk: Adds nutrition, a creamy flavor, and moisture to the pancakes.
Carrots: Provide color, vitamins, and a rich texture.
Green Onions: Enhance the flavor.
Luncheon Meat: Adds protein and a unique taste.
Seasonings
Salt: Enhances the flavor.
Five-Spice Powder: Adds a distinctive taste.
Substitutions
Milk Substitute: Water can be used instead of milk, though it will lack the creamy flavor.
What does adding eggs to pancakes do
Nutritional Boost: Eggs are a great source of high-quality protein and are rich in vitamins and minerals. Adding eggs to your pancakes significantly enhances their nutritional value.
Improved Texture: Eggs make the pancakes richer in texture, combining the crispiness of the pancake with the softness of the egg, resulting in a more layered and satisfying bite.
Increased Binding: The proteins in eggs coagulate when heated, which helps strengthen the internal structure of the pancakes, making them less likely to fall apart and easier to shape.
Enhanced Color: The natural yellow pigment in egg yolks gives the pancakes a more appealing golden hue, making them look more appetizing.
Flavor Enhancement: The savory taste of eggs blends perfectly with the aroma of the pancakes, creating a unique and delicious flavor that makes them an excellent choice for breakfast or an afternoon snack.
Tips for Success
Choose Fresh Eggs: Fresh eggs with plump whites and vibrant yolks provide better flavor, texture, and elasticity.
Use the Right Amount of Flour: Any type of flour can be used, but the quantity should be appropriate. Mix the batter in one direction to avoid lumps and ensure a smooth, even texture.
Proper Liquid Measurement: Whether using milk or water, the liquid amount should be precise to ensure the batter has the right consistency—not too thick or too thin.
Control the Heat: Cook over medium-low heat. Pour the batter into the pan when it's not too hot, and gently shake the pan while cooking to ensure even heating and prevent burning or undercooking.
Prepare Ingredients Carefully: Cut vegetables evenly and finely chop the meat to enhance the texture and blend the flavors well. Follow these tips to easily make delicious egg pancakes.

-
·400g flour
Accessories
-
·300ml whole milk
-
·80g carrot
-
·20g green onions
-
·100g luncheon meat
Seasonings
-
·5g salt
-
·3g Chinese five-spice powder
-
·20ml scallion oil
-
·20ml cooked oil
COOKING STEP
Step 1
In a large bowl, beat 5 eggs and add 400g of flour. Use chopsticks to stir in one direction until you get a smooth batter with no lumps.
Step 2
Add 300ml of whole milk to the batter and continue to stir until well combined.
Step 3
Wash and finely chop half a carrot into thin slices, fine shreds, or small cubes. Add to the batter. Wash and chop the green onions into small pieces and add to the batter. Dice the luncheon meat and add it to the batter as well.
Step 4
Add an appropriate amount of salt and a pinch of Chinese five-spice powder. Stir the batter again until well mixed. You can prepare the batter in advance and refrigerate it for the next day; just stir it again before use.
Step 5
Heat a pan and brush it with a layer of scallion oil. Do not overheat the pan. Pour a ladle of batter into the pan and tilt the pan to spread the batter evenly. Cook over medium-low heat, shaking the pan occasionally.
Step 6
After about 1 minute, when the batter has set, brush a layer of scallion oil or cooked oil on top. Continue to shake the pan, then flip the pancake and cook for another minute over medium-low heat. You can gently press the pancake to ensure even cooking. If you prefer a crispier exterior, cook a bit longer. Remove the pancake and serve.
Step 7
For additional pancakes, brush the pan with a little oil, pour a ladle of batter into the pan, and tilt to spread the batter evenly. If the pan is still warm, you can spread the batter before turning on the heat. Cook over medium-low heat, brush with oil after 1 minute, shake the pan, flip, and cook for another minute. For a crispy exterior and tender interior, you can flip the pancake a few more times.
Recipe Variations
Add Ham:
Cut ham into small pieces or thin slices and add to the egg pancake for a savory, meaty flavor.
Add Shrimp:
Incorporate prepared shrimp for a fresh, sweet taste and a delightful, bouncy texture.
Add Cheese:
Include cheese such as mozzarella or cheddar for a rich, creamy flavor. The cheese will melt and create a gooey, stretchy texture when cooked.
Add Kimchi:
Chop kimchi and mix it into the pancake batter for a tangy, spicy kick that adds a unique flavor.
Add Seaweed Flakes:
Sprinkle seaweed flakes into the batter for an oceanic aroma and a crispy texture. The green color also enhances the pancake's visual appeal.
Serving Suggestions
Recommended Pairings:
Soy Milk: Plain soy milk complements the egg and flour flavors, while sweet soy milk adds a touch of sweetness, making for a nutritious breakfast combo.
Milk: Whole milk provides a smooth, rich taste, while yogurt offers a tangy contrast. Fruit yogurt can add an additional layer of texture and flavor.
Tomato Ketchup: Spread some ketchup on the pancake for a sweet and tangy taste, appealing to children and those who enjoy sweet and sour flavors.
Consumption Tips:
Enjoy the egg pancake fresh off the pan for the best texture—crispy on the outside and soft inside. It may become cold and dry if left out too long.
Adjust the pairings to suit your taste. Add sugar or choose sweet beverages if you prefer sweet flavors, or add more savory ingredients or sauces for a saltier taste.
