
Enoki Mushroom with Pork

INGREDIENTS

- ·250g enoki mushrooms (remove the roots and break them apart)
- ·120g pork (cut into thin shreds)

- ·5ml cooking wine
- ·5ml light soy sauce
- ·2g salt
- ·1 egg white
- ·5g cornstarch
- ·30ml cooking oil
- ·5ml sesame oil
DIRECTIONS
Step 1
First, take out 120g of pork and cut it into thin shreds. Put them in a bowl and set aside.
Step 2
Then add 5ml of cooking wine, 5ml of light soy sauce, and 2g of salt. Stir well, then crack in 1 egg white and mix until the pork shreds are evenly coated with the seasonings.
Step 3
Add 5g of cornstarch and keep mixing until the pork shreds are smooth. Set aside to marinate for 5 minutes.
Step 4
While the pork is marinating, prepare the side dishes: Remove the roots of 250g of enoki mushrooms and break them apart. Shred 10g of red pepper, cut 20g of cilantro into sections, and shred 10g of green onion and 10g of ginger.

After marinating for 5 minutes, heat the wok first, add 15ml of cooking oil. When the oil temperature rises, put in the enoki mushrooms, sprinkle 2g of salt, and quickly stir - fry until the enoki mushrooms become soft. Take them out and set aside.

Leave some oil in the wok, add another 15ml of cooking oil. When the oil is 80% hot, add 10g of shredded ginger and 10g of shredded green onion, and quickly stir - fry until the aroma is strong.

Then add the marinated pork shreds and quickly stir - fry until the pork shreds change color. Add 5ml of cooking wine and 5ml of light soy sauce, and continue to stir evenly to make the pork shreds absorb the seasonings.

Next, add 10g of shredded red pepper and the stir - fried enoki mushrooms, and continue to stir evenly to ensure that the ingredients are fully mixed.
