Ingredients and Substitutes
To make this delicacy, you need to prepare the following ingredients:
Main Ingredients
Red pepper: adds color and a slightly spicy taste to the dish.
Green pepper: brings a refreshing taste and spicy flavor.
Carrots: provide nutrients such as carotene, increase sweetness and taste.
Sour kimchi: gives a unique sour taste and enhances the flavor.
Onions: adds onion aroma and enriches the taste.
Eggs: are the main raw material of omelettes, making the omelettes rich in protein and tender.
Supplementary Ingredients
Flour: plays a role in binding ingredients and shaping the batter.
Seasonings
Salt: used for basic seasoning and enhances the taste.
Oil: used for frying omelettes to make the surface golden and crispy.
Substitutes
Red and green peppers can be replaced with colored peppers, etc., which will change the taste and spiciness.
Sour kimchi can be replaced with other fermented vegetables with a stronger sour taste, such as sauerkraut.
Flour If regular flour is not available, gluten-free flour mixture can be used instead.
Tips for Success
Choose fresh ingredients: Use fresh vegetables and eggs. Fresh vegetables taste better and are rich in moisture, which can add flavor. Fresh eggs can blend better with the ingredients and make the omelette structure more stable.
Stirring: Stir the ingredients thoroughly to prevent the flour from lumps and evenly coat the ingredients with egg liquid and flour. Make the omelette texture uniform and avoid local voids or accumulation of ingredients.
Control the heat: When pursuing your goals, be patient and don't rush for success. Simmer over low heat to ensure that each step is stable and reliable.
Master the time: Fry the bottom for 90 seconds, roll it into a long roll, and fry it for another minute. The same is true for the second omelette. If the time is too long, the omelette will become old and dry, and if it is too short, the inside will not be cooked.

Storage Instructions
Short-term storage (within 1-2 days)
Store at room temperature (if conditions permit): Store egg rolls in a covered container at room temperature at 15-20℃ in a dry environment, and avoid light and odor.
Store in refrigerator (more commonly used): Seal the egg rolls with plastic wrap or a fresh-keeping bag and place them in the refrigerator (2-8℃). Low temperature can inhibit bacteria. Let them warm up slightly before eating.
Long-term storage (more than 2 days)
Store in the freezer: If you don't plan to eat them in the short term, seal the egg rolls with a fresh-keeping bag or a fresh-keeping box and place them in the freezer (below -18℃). Take them out in advance before eating, thaw them in the refrigerator or at room temperature, and then heat them in a frying pan. However, the taste of frozen egg rolls is slightly worse than fresh ones, and the texture will be looser.
Recipe Variations
Ingredient Variations
Add meat: Add diced ham or bacon to add salty, smoky flavor and protein to enhance satiety.
Change vegetables: Replace some diced carrots with corn kernels to bring a sweet and crisp taste; or add diced mushrooms to make the taste more intense.
Seasoning Variations
Add spice powder: Add a small amount of black pepper or cumin powder when stirring the batter to add a unique aroma and diversify the taste.
Change sauce: Apply ketchup, sweet and spicy sauce or salad dressing when rolling the omelette to match the flavor of the omelette to create a new flavor.
Production method variation
Layered production: First fry part of the batter into a pancake, then pour the remaining batter after spreading cheese. After the cheese melts, it has the effect of bonding and enriching the taste, and can also be drawn.
Baking attempt: Pour the batter into the baking pan and bake in the oven at 180℃ for 15-20 minutes. The baked omelet has a slightly crisp crust and soft interior. The taste is different from that of fried omelet.
