- ·150g winter bamboo shoots
- ·50g dried tofu
- ·50g pork belly

- ·15g scallions

- ·15ml cooking oil
- ·5g salt
- ·3g sugar
- ·10ml light soy sauce
DIRECTIONS
Step 1
Preparation for soaking vermicelli:
Put 50 grams of vermicelli into clear water and soak it for 20 minutes until the vermicelli becomes soft and there is no hard core. Then take it out.
Step 2
Shredding ingredients:
Cut 150 grams of winter bamboo shoots, 50 grams of dried tofu and 50 grams of pork belly into shreds of uniform thickness respectively. Then cut 15 grams of scallions into sections and place them neatly.
Step 3
Stir-frying shredded pork belly:
Pour 15 milliliters of cooking oil into the pot and heat it over high heat. After the oil is hot, put in the shredded pork belly and quickly stir-fry. Stir-fry the shredded pork until it changes color and the surface is slightly golden. Let part of the fat of pork belly seep out to enhance the fragrance.
Step 4
Add side dishes and stir-fry:
Add shredded winter bamboo shoots and shredded dried tofu in sequence to the changed color shredded pork belly and continue to stir-fry. Stir-fry until the shredded winter bamboo shoots become slightly soft. Ensure that each ingredient can be evenly heated and absorb each other's flavors.
Step 5
Put in vermicelli and stir-fry:
Pour the soaked and drained vermicelli into the pot. Turn to low heat. Use chopsticks and a spatula to cooperate and gently turn the vermicelli to make the vermicelli evenly mix with the ingredients in the pot and avoid the vermicelli from agglomerating or breaking.
Step 6
Seasoning and simmering:
Add 5 grams of salt, 3 grams of sugar and 10 milliliters of light soy sauce and continue to stir-fry to make the seasonings evenly distributed among the ingredients. Then add a little clear water. Cover the pot and simmer over low heat for 2 - 3 minutes.
Step 7
Take out of the pot and plate:
Uncover the pot. Sprinkle with the cut scallions and quickly stir-fry a few times to let the fragrance of scallions emit. Then turn off the heat.
