Mushroom with Pork

To create memorable mushroom with pork, besides quality ingredients, mastering proper cooking methods is essential. Let's reveal its essence.
Why do you like it?
Because the steps are very simple and it's not strenuous to make at all.
In terms of the combination, the lean pork and shiitake mushrooms complement each other perfectly, making the taste rich in layers.
Regarding the seasoning, the aroma is fully released in each step, making it extremely delicious.
The final dish served out of the pot has an appealing color, aroma and taste, which is really appetizing.
How to handle shiitake mushrooms?
Cleaning: Wipe the dust off the surface with a damp cloth or rinse them quickly. Don't soak them in water for a long time, or they will become soft and affect the texture.
Stem removal: The stem part is relatively hard. After cutting it off, you can save it for making soup or stewing dishes without wasting it.
Cutting: It is recommended to cut them into thick slices and try to make the sizes as even as possible. This way, they will be heated more evenly when stir-frying and be more flavorful.
Which kind of pork should I use?
Just use lean pork! But remember to choose fresh ones, as the texture will be more tender when stir-fried.
Cut the pork slices thinly. This way, they can absorb the marinade more easily, cook faster during stir-frying, and won't be tough. Besides lean pork, I also recommend pork tenderloin or plum blossom pork.
Pork tenderloin: It has a tender texture, is suitable for quick stir-frying, and is less likely to become tough.
Plum blossom pork: It has some delicate fat, making it more fragrant and slippery when stir-fried.

COOKING STEP
Step 1
Cut the lean pork into thin slices and put them in a bowl. Add 3g of salt, 2g of sugar, 5ml of cooking wine, and 5ml of light soy sauce. Stir well. Then add 15ml of cornstarch slurry, continue to mix evenly, and marinate for 5 minutes.

Step 2
While marinating the pork slices, prepare to chop other ingredients: stem and cut 500g of shiitake mushrooms, slice 5g of ginger, slice 5g of garlic, cut 20g of red pepper into diamond shapes, and cut 30g of garlic scapes into sections.

Step 3
Heat a pan and pour in some oil. When the oil starts to slightly smoke, stir-fry the marinated pork slices until they change color, then remove and set aside.

Step 4
Leave a little oil in the pan. Add the sliced ginger and garlic and stir-fry until fragrant. Then add 500g of shiitake mushroom pieces and stir-fry.

Add 3g of salt and 2g of sugar, and continue to stir-fry for 1 minute to let the flavors penetrate evenly.

Cooking Tips
Knead the marinated meat more: After adding the cornstarch slurry, knead the meat a few more times to allow the pork slices to fully absorb the moisture. Let it stand for a few minutes after the surface becomes sticky. This will make the stir-fried meat more slippery and tender.
Make the shiitake mushrooms more flavorful: When stir-frying shiitake mushrooms, first add cooking wine and a little water and simmer for one minute to let the mushrooms absorb the moisture first. Then add salt for seasoning, which will make them more flavorful.
The order of adding side dishes: Add the red pepper and garlic scapes last. Stir-fry them quickly over high heat for a few seconds and then remove them from the pan immediately. This way, they will look nice in color and their texture will not become soft.
Pay attention to thickening: Pour the cornstarch slurry along the edge of the pan. Turn off the heat after stir-frying a few times. This will make the sauce thick enough to coat all the ingredients just right.
Don't overcook the stir-fried meat: Put the pork slices into the pan when the oil is hot. Remove them immediately when they change color. Stir-fry them quickly a few times when adding them back later. This will prevent the meat from becoming tough.
Substitutions and Variations
Substitute meat: If you want to change the taste, you can use chicken breast, beef or different parts of pork instead of the lean pork. They can all absorb the flavor of the shiitake mushrooms and have a good texture.
Substitute shiitake mushrooms: You can use other mushrooms, such as white mushrooms, king oyster mushrooms or enoki mushrooms. They are all good substitution options. Different mushrooms have different flavors but are equally delicious.
Add more vegetables: You can add some vegetables like carrots, green peppers, onions, etc. to enrich the color and nutrition.
Adjust seasonings: If you want a stronger flavor, you can add more soy sauce or less sugar. You can even try adding a little bit of chili to give the dish a spicy taste.
What dishes can be paired with it?
Rice: White rice or fragrant rice can soak up the sauce fully. It pairs perfectly with the stir-fried meat.
Stir-fried seasonal vegetables: Such as stir-fried green vegetables and broccoli. They are refreshing and not greasy, making a great match with the stir-fried meat.
Potatoes: Mashed potatoes or baked potatoes have a rich texture, which brings more satisfaction when eaten together.
Noodles: Stir-fried noodles, spaghetti or rice noodles. I often add shiitake mushrooms when having rice noodles.
FAQs:
If you want to enhance the flavor, it is recommended to use some of the water used to soak the mushrooms instead of plain water during stir - frying.
Freezing is not recommended because the texture of shiitake mushrooms will become soft after thawing, which affects the taste.
When stir - frying, the oil temperature should be high. Stir - fry quickly and remove the pork slices as soon as they change color. Finally, mix them with shiitake mushrooms and stir - fry a few times to avoid them becoming tough due to long - term heating.
After thawing, treat them according to the marinating steps. Add cornstarch slurry and mix well to ensure the pork slices are tender and smooth.
