- ·500g fresh shiitake mushrooms (stemmed and cut into pieces)
- ·300g lean pork

- ·5g ginger (sliced)
- ·5g garlic (sliced)
- ·20g red pepper (cut into diamond-shaped slices)
- ·30g garlic scapes (cut into 5-cm sections)
Seasonings
- ·6g salt
- ·4g sugar
- ·10ml cooking wine
- ·5ml light soy sauce
- ·25ml cornstarch slurry
- ·5ml cooking wine
- ·10g oyster sauce
DIRECTIONS
Step 1
Cut the lean pork into thin slices and put them in a bowl. Add 3g of salt, 2g of sugar, 5ml of cooking wine, and 5ml of light soy sauce. Stir well. Then add 15ml of cornstarch slurry, continue to mix evenly, and marinate for 5 minutes.
Step 2
While marinating the pork slices, prepare to chop other ingredients: stem and cut 500g of shiitake mushrooms, slice 5g of ginger, slice 5g of garlic, cut 20g of red pepper into diamond shapes, and cut 30g of garlic scapes into sections.
Step 3
Heat a pan and pour in some oil. When the oil starts to slightly smoke, stir-fry the marinated pork slices until they change color, then remove and set aside.
Step 4
Leave a little oil in the pan. Add the sliced ginger and garlic and stir-fry until fragrant. Then add 500g of shiitake mushroom pieces and stir-fry.
Step 5
Add 10ml of cooking wine to get rid of the fishy smell, and then pour in 30ml of water. Simmer for 1 minute to let the shiitake mushrooms release their aroma.
Step 6
Add 3g of salt and 2g of sugar, and continue to stir-fry for 1 minute to let the flavors penetrate evenly.
Step 7
Add 10g of oyster sauce, then add the red pepper, garlic scapes, and the cooked pork slices. Stir-fry evenly.
Step 8
Finally, add 10ml of cornstarch slurry to thicken. Stir-fry until the sauce thickens, then turn off the heat and serve.
