Rolling Donkey: A Beijing Snack with Cultural Charm

    bowl (100 g) of soybeans

    250 g of flour
  • ·
    100 g of red bean paste

    200 mL of water

    15 g of white sugar

DIRECTIONS

Step 1

Start by popping a cup (100g) of soybeans into your blender and give it a whirl until youve got a fine soybean powder. Set this aside for now.

Step 2

In a bowl, measure out 250g of flour and gradually add a bit of water, stirring it up with chopsticks or a whisk until youve got a smooth batter. If it needs more water, just keep adding until its just right.

Step 3

Pour your batter into a steamer lined with cheesecloth, place it over high heat, and let it steam for about 8 minutes. Once its done, take out your beautifully steamed dough.

Step 4

Spread some soybean powder on your work surface, put your steamed dough on top, and get your hands in there to knead it all together and roll it out into a sheet. A rolling pin can be your best friend here.

Step 5

Once youve got your sheet, evenly spread your red bean paste on top.

Step 6

Roll your sheet into a long log shape.

Step 7

Sprinkle 15g of sugar evenly over the log, then cover it with the remaining soybean powder.

Step 8

Finally, use a knife to slice your log into 3cm wide pieces, arrange them on a plate, and youre ready to dig in!
