
Ice Cream Profiteroles Recipe

- ·70g butter
- ·20g powdered sugar
- ·80g low-gluten flour
- ·8g cocoa powder
- ·40g water
- ·40g milk
- ·15g sugar
- ·1g salt
- ·90g egg liquid
- ·200g whipping cream
- ·30g brown sugar pearls
DIRECTIONS
Step 1
Puff pastry: Mix 35g butter and 20g sugar evenly, add 35g low-gluten flour and 3g cocoa powder and mix well until there is no dry powder.
Step 2
Place it on wax paper and roll it into a 3mm thin sheet. Use a mold to press it into a round shape and freeze it for 60 minutes.
Step 3
Profiteroles body: Take 35g butter, 40g milk, 40g water, 5g sugar and 1g salt, heat on low heat until boiling, then turn off the heat.
Step 4
Sieve the liquid, add 45g cake flour and 5g cocoa powder, stir until there is no dry powder, stir-fry over medium heat for 2 minutes.
Step 5
Add 90g of egg liquid in three times and stir until thick.
Step 6
Put the filling into a piping bag and squeeze it into the baking tray. Cover it with the puff pastry prepared in advance and bake in preheated oven at 180 degrees for 30 minutes.
Step 7
Pearl cream: Take 200g whipping cream and 10g sugar and beat until foamy and dense.
Step 8
Add 30g of pearls and stir well.
Step 9
Take out the baked Profiteroles , poke a hole at the bottom, squeeze in the pearl cream, cut into pieces, and done.
