
Deluxe Pumpkin Stew

DIRECTIONS
Step 1
Prepare the pumpkin: Cut out about a quarter of the cover on the Hubbard squash with a knife. Remove the seeds and cut the edge of the pumpkin into serrated lace. Peel the cover and cut it into pieces about 1 centimeter in size.
Step 2
Process the ingredients: Soak the yuba until soft and without hard cores. Take it out, drain and cut it into sections, each 3 - 4 centimeters long. Remove the stems of pleurotus eryngii and enoki mushrooms and cut them into pieces. Cut shiitake mushrooms into pieces similar in size to pumpkin pieces.
Step 3
Steam the pumpkin casserole: Put the processed pumpkin casserole into a steamer. After boiling water with high heat, turn to low heat and steam for 15 - 20 minutes. If a chopstick can be easily inserted into the pumpkin flesh, it means it is cooked. Take it out and set aside.
Step 4
Fry the ingredients: Put 50 ml oil in a pan. Heat it over medium heat and then add pleurotus eryngii, enoki mushrooms, and shiitake mushrooms. Stir-fry quickly for 1 minute. Then add green beans, pumpkin pieces, and yuba sections and stir evenly.
Step 5
Season and cook: Add 300 ml stock to the pan, then add 3 g salt, 2 g sugar, and 10 ml oyster sauce. Stir evenly and boil over high heat for 1 minute to let the ingredients absorb the soup flavor.
Step 6
Put in the casserole and arrange: Put all the cooked ingredients into the steamed pumpkin casserole and arrange them neatly and beautifully.
