Purple potato

Purple potatoes are very common ingredients, but do you know how long they need to be cooked? Today, I will share the cooking skills of purple potatoes with you to ensure that you won't fail in cooking next time!

Purple potatoes cooking time

The cooking time of purple potatoes is affected by their size and cooking methods:

Boiling

If you boil purple potatoes, for medium-sized purple potatoes, it takes about 15 - 20 minutes. But if the purple potatoes are relatively large, then it will take longer, maybe about 20 - 30 minutes.

Like I boiled a super large purple potato before, and it took a little longer, almost nearly 30 minutes. It is very simple to judge whether purple potatoes are cooked. Insert a chopstick. If it can be easily inserted, it means it is cooked.

Steaming

If you steam purple potatoes, for smaller purple potatoes, it takes about 15 - 20 minutes to steam. If they are medium-sized, it takes about 20 - 25 minutes.

Baking

If you bake purple potatoes, for smaller purple potatoes, it takes about 20-25 minutes in the oven. If they are relatively large, the baking time will be extended, about 30-40 minutes or even longer.

What are purple potatoes good for cooking?

Purple potatoes can be used to make many dishes, such as purple potato braised rice, purple potato steamed buns, purple potato stir-fried green peppers, purple potato braised eggplant, baked purple potatoes, etc. The tastes tasted by different methods are different. You can choose according to your own taste. Here are my favorite ways to eat:

Purple potato

Purple potato braised rice

Cut purple potatoes into small pieces and put them in the rice cooker with rice.

Add an appropriate amount of water, light soy sauce, salt, cooking oil and your favorite side dishes, such as sausages, carrots and the like.

Press the cooking button. After cooking, the rice grains are plump, and the purple potatoes are soft, glutinous and sweet. Every bite is super satisfying.

Purple potato steamed buns

Steam purple potatoes and mash them. Mix with flour, yeast, sugar and milk to form a smooth dough.

After fermentation, divide it into small pieces, roll them into steamed bun shapes, let them rise again for a while, and then steam them in a steamer.

The steamed buns made not only have a beautiful color, but also have a faint fragrance of purple potatoes.

Purple potato stir-fried green peppers

Shred purple potatoes and green peppers.

Pour oil in the pan. After the oil is hot, add garlic slices and stir-fry until fragrant. Then add shredded purple potatoes and stir-fry.

After changing color, add shredded green peppers, continue to stir-fry, and then add an appropriate amount of salt, light soy sauce, vinegar and other seasonings.

After frying, plate it. This dish has a refreshing taste. The shredded purple potatoes are powdery and very appetizing.

Purple potato braised eggplant

Cut purple potatoes into pieces and eggplant into strips.

First, marinate the eggplant with salt and squeeze out the water.

Pour oil in the pan. Put the eggplant in and fry until soft and then take it out. Then use the remaining oil to stir-fry scallions, ginger and garlic. Add purple potato pieces and stir-fry. Add seasonings such as light soy sauce, dark soy sauce and sugar.

Add water to cover the ingredients. Cook until the purple potatoes become soft. Put the eggplant in and cook for a while. When the soup thickens, it's ready.

Do purple potatoes stay purple when cooked?

The reason why purple potatoes are purple is mainly because purple potatoes contain a large amount of anthocyanins. Anthocyanins are water-soluble pigments and will change a little during the heating and cooking process, but the color change will not be very large.

But if the cooking time of purple potatoes is too long or the cooking temperature is too high, then the color of purple potatoes may become lighter further, and even turn yellow or brown.

How do you know when purple potatoes are ready?

You can judge whether purple potatoes are ripe by the following methods:

First, poke with chopsticks or toothpicks. When boiling or steaming purple potatoes, when the time is almost up, take a chopstick or toothpick and gently prick the purple potato. If it can be easily inserted all the way to the center part without obvious resistance, then it means it is cooked.

Second, observe the appearance. If it is boiled purple potatoes, when its skin begins to crack a little or the color becomes a little darker, this may be a sign of being cooked. If it is steamed purple potatoes, the surface will become relatively soft. When gently pressed, you can feel that it is no longer hard.

Third, judge from the taste. If you are not sure if it is cooked, you can take a small piece and taste it first. The cooked purple potato has a soft and glutinous taste. There is no stiff feeling. It is easy to chew and there is no raw taste of starch.

Are purple potatoes healthier than white potatoes?

Both purple potatoes and white potatoes are relatively healthy foods. You can choose according to your own needs:

Purple potatoes

Purple potatoes are rich in anthocyanins, which can help our bodies fight free radicals and are also good for the skin. They can reduce wrinkle production and improve dullness. Moreover, purple potatoes also contain nutritional ingredients such as vitamin C and potassium.

White potatoes

The main nutritional component of white potatoes is carbohydrates, which can provide energy. It also contains vitamin B group, like vitamin B6, which is very important for the health of the brain and nervous system. It also contains a certain amount of dietary fiber, which is helpful for intestinal peristalsis.

So it cannot be simply said that purple potatoes are healthier than white potatoes. If you want to consume more antioxidant ingredients, purple potatoes will be a good choice. If you pay more attention to energy supplementation and basic vitamin intake, white potatoes are also very good. And in the diet, you can also eat them together to enjoy their different deliciousness and nutrition.

How long do cooked purple potatoes last?

Refrigerated storage

Put cooked purple potatoes in the refrigerator for refrigeration as soon as possible to reduce the speed of bacterial reproduction. During refrigeration, the temperature of purple potatoes should be kept below 4 degrees Celsius and can be stored for 2-3 days.

Frozen storage

Cut cooked purple potatoes into small pieces, rinse off the surface starch with water, absorb the surface moisture with kitchen paper, and put them in a sealed bag for frozen storage. When eating, thaw and heat, and it can be stored for about 1 month.

Precautions

Even if the correct preservation method is adopted, the possibility of purple potatoes spoiling cannot be completely excluded. Before eating, carefully check the state of purple potatoes.

If there are sticky, discolored, moldy or smelly signs on the surface of purple potatoes, they may have deteriorated. At this time, they should be discarded decisively to avoid health problems after eating.

How to know if purple potatoes have gone bad?

You can judge whether purple potatoes have deteriorated by the following methods:

Observe the appearance

See if there are cyan or light cyan spots on the surface of purple potatoes, or if there are signs of sprouting. Sprouted potatoes contain solanine, which is a toxic substance and may cause poisoning after eating.

Cut and check

You can cut purple potatoes open and observe whether there are gray, cyan or black spots inside. These color changes may be signs of deterioration.

Smell

You can also smell if purple potatoes have an abnormal smell, such as a rotten or moldy smell. Deteriorated purple potatoes usually emit an unpleasant smell.

Touch test

Fresh purple potatoes should be hard. If they feel soft or wet, they may have deteriorated.

Check the storage time

The shelf life of purple potatoes is generally 3-4 months. After this time, even if there are no obvious signs of deterioration, it is not recommended to eat them.
