
Chinese Steamed Eggs With Clams

DIRECTIONS
Step 1
Clam processing: Pour the clams into clear water, add 2g salt and soak for 1 hour to make them spit out sand. Wash 10 grams of scallions and cut them into scallions for later use.
Step 2
Blanching clams: Add 500ml of clear water to the pot. When the water boils, pour in the washed clams and cook until the shells open. Take them out and put them in cold water for cleaning again. Reserve the water for boiling clams.
Step 3
Egg liquid preparation: Beat 3 eggs into a bowl, add 2.5g salt, 5ml light soy sauce, 5ml cooking wine, 5 drops of cooking oil and 5ml sesame oil in turn, stir evenly, then pour in about 100ml of clam water and continue to beat until fluffy, and then sprinkle 2g pepper and stir well.
Step 4
Assemble ingredients: Put the processed clams in a bowl and slowly pour in the egg liquid to ensure that the egg liquid covers the clams.
Step 5
Steaming egg liquid: Put the clam egg liquid in a steamer and steam it for about 5 - 10 minutes until the egg liquid solidifies.
Step 6
Drizzle oil and season: Pour 5ml of oil into the pot and heat it until it smokes. Drizzle it on the steamed egg with clams, and then pour in 10ml of steamed fish soy sauce, and it's done.
