This ensures the noodles stay bouncy when fried.

Vegetables

Vegetables are a key component, not only adding nutritional value but also giving the dish color. Common vegetables include shredded carrots, green peppers, onions, zucchini, and cabbage. After cutting them into thin strips, fry them along with the noodles to add a fresh and crispy texture.

However, during preparation, fried noodles often use a considerable amount of oil, which increases calorie and fat intake.

From a health perspective, it’s fine to enjoy fried noodles in moderation, but overeating can lead to excess calories and weight gain. Moreover, the high oil and salt content might not be ideal for those with high cholesterol or high blood sugar.

How to Make the Best Simple Fried Noodles

Ingredients

Fresh noodles: 100-150g

Eggs: 2

Small greens (such as bok choy): 3 pieces

Mung bean sprouts: 50g

Chopped onions: 10g

Minced garlic: 15g

Method

1.Wash the greens and bean sprouts, beat the eggs, and slice the ham.

2.Boil water in a pot, cook the noodles for 2 minutes, then drain and rinse with cold water. Set aside.

3.Heat some oil in the pan and scramble the eggs, then set them aside.

4.Add oil to the pan, sauté the chopped onions and garlic until fragrant, then add the ham, greens, and bean sprouts. Stir-fry until soft.

5.Add the noodles to the pan, and season with 1 tablespoon of light soy sauce, 1 tablespoon of oyster sauce, a dash of dark soy sauce (or a little salt), and stir in the scrambled eggs. Stir well to combine.
