DIRECTIONS

Step 1

Ingredients preparation: Cut the yam into pieces with a rolling knife, cut the ginger into slices, and cut the ribs into even-sized pieces.

Step 2

Preliminary processing of ribs: Add enough water to the pot, put in the ribs, then add appropriate amount of cooking wine, blanch until the ribs change color and then remove from the pot.

Step 3

Start stewing: Pour water back into the pot, add ginger slices and blanched pork ribs, and bring to a boil over high heat.

Step 4

Skim the foam: When the water boils, there will be foam. Use a spoon to skim off the foam. The foam will affect the taste and clarity of the soup. Skimming it off will make the soup more delicious.

Step 5

Add yam: After skimming off the foam, add the cut yam pieces, cover the pot, turn to low heat and simmer for 15 hours.

Step 6
