Seasonings

  • ·
    5g salt
  • ·
    50ml cooking oil
  • ·
    70g white sugar
  • ·
    5g baking powder

DIRECTIONS

Step 1

First, process the ingredients. Take 100 grams of pork and cut it into diced pieces. Cut 5 grams of scallions and 5 grams of ginger into diced pieces. Cut 2 cloves of garlic into slices. At the same time, prepare 50 grams of shredded cucumbers and set them aside separately.

Step 2

Next, fry the ingredients to release fragrance. Pour 50 milliliters of cooking oil into the pot. After the oil is hot, add 2 star anise and fry over low heat until a fragrance is emitted.

Step 3

Then stir-fry the diced meat. Add the diced pork to the pot and stir-fry over medium heat until the diced meat changes color and is fragrant.

Step 4

After that, add ingredients and stir-fry the sauce. Pour in the garlic slices, scallion dices, and ginger dices and stir-fry until fragrant. Then add 60 grams of fried sauce and 15 grams of sweet flour paste and continue to stir until evenly mixed.

Step 5

Then season and simmer the sauce. Add 5 grams of salt and 50 milliliters of water. First bring to a boil over high heat, then turn to low heat and simmer slowly until the sauce becomes thick. Then turn off the heat and set aside.

Step 6

Next, make dough. Put 130 grams of flour, 5 grams of baking powder, and 70 grams of white sugar in a bowl. Then pour in 50 milliliters of oil and 50 milliliters of water. Stir evenly to form a fluffy dough.

Step 7

Then knead the dough and let it rest. Move the dough to a floured cutting board and knead it for 5 to 7 minutes until the surface is smooth. Then cover it with a damp cloth and let it rest for 30 minutes.

Step 8

Then make noodles and shape. Divide the rested dough into two equal parts. Roll each part into a long strip, then roll it thinner and cut it into uniform noodle shapes.

Step 9

Boil water in a pot. After the water boils, put in the noodles and cook for 15 minutes.

Step 10

After cooking, take out and put into a bowl. Pour on the prepared fried sauce and spread the prepared shredded cucumbers.
